MANGO SALSA
STEP 1
Ingredients
2 cups chopped mangoes- my Auntie Ligaya Coloma gave me Hayden mangoes grown in her yard!
1 chopped red bell pepper (remove seeds)
1/2 chopped red onion
1/4 cup finely chopped cilantro
juice from two limes
Hawaiian salt to taste

1-2 seeded and diced jalapeno- I am a weakling when it comes to hot stuff so I did not add it to my salsa- yes, it's sad

Prep ingredients. Chop, chop.

Mix and enjoy!


STEP 4
Fill your 9-inch plate with non-starchy veggies like lettuce, cucumbers, and carrots topped with olive oil dressing. The starch is roasted Okinawan sweet potatoes. The 1/2 cup mango salsa was the topping for panko crusted mahi which was prepared by one of my best friends, Carolyn Cabjuan. The fish was caught off the coast of Oahu by her son, Matt Cabjuan aboard their boat the Carol C's. Approx 60gm of carb from the potatoes, mangoes, and panko crust. 4gm protein. Approx 480 calories. Can't beat fresh fish from your friends! However, you can use the mango salsa to top off any protein like grilled pork, chicken, or fish. Yum!
